Payroll taxes are the pits, but the solution is for *all* restaurants to pay their fare share, not for those who choose to pay their workers well to take a huge tax hit.Unfortunately, the episode did not go into the biggest problem that it raised with tipping in its introduction, which is the practice of consumers being asked to tip for all sorts of services that are not table service, including purchasing a bagel at a fast food counter. This is the most enraging recent development, and also the hardest to navigate.
